What happens to quality?

Does converting a PDF to JPG extract the original embedded photos?
No. It renders the complete page—text, photos and layout—into one image. That is different from extracting the original image objects stored inside a PDF.
Can I convert a password-protected PDF?

Why is my converted image blurry?
The source may be a low-resolution scan, or JPG compression may soften fine text. Try PNG and check the original PDF at high zoom. Conversion cannot recreate detail that is absent from the source.
